- a bunch of sayote tops, discard the stems and keep the young leaves. Yields about 6 cups of leaves.
- 1 head garlic, crushed or minced
- 1/8 cup butter (or more)
- In a medium pan, heat butter.
- add garlic and sweat but do not brown.
- add your leaves and toss until leaves are wilted.
- Season with salt and pepper of you wish.
- Serve immediately.
